He was known for his contemporary cooking style, often called cuisine du soleil, a variation of Provençal cuisine. Together with Paul Bocuse, Gaston Lenôtre and others, he is credited with inventing nouvelle cuisine - rejecting Escoffier's classic sauces and techniques and replacing it with fresh, local ingredients whose flavor stood out without the addition of cream and butter.
