More than 700 healthy French recipes, and advice for making sauces, soups, an the foundations of cooking. Édouard de Pomiane (1875-1964) was a prolific food writer, who also worked as a physician at the Institut Pasteur in Paris. He had a disdain for upper-class elaborate French cuisine. He traveled widely and quite a few of his recipes are from abroad, and his recipes often take pains to demystify cooking by explaining the chemical processes at work. Rubbing to extremities, else very good.
