Escoffier died at the age of eighty-eight in 1935, after having trained more than two thousand chefs and promoting French cuisine (and especially the master sauces) around the world. His many disciples paid tribute to him by allowing the reissue of this Aide-Mémoire culinaire, prefaced by Michel Escoffier, his great-grandson. It is a reference tool in the same way as his culinary guide. This was published in 1928. Faint stains to boards, spine label discolored from stains; front free endpaper lacking, else a good, solid copy; scarce in any edition.
