A vital back-pocket guide for chefs and cooks in France, published just after Escoffier published his opus on cooking. This was considered to be the "Cliff Notes" version, with tabbed pages arranged alphabetically, and describing in abbreviated wording the necessary language of the kitchen. Chipping to spine ends and a bit of fading to spine; inscription dated 1947 to half-title, else very good.
