Founded in 1881 by Pauline Agassiz Shaw, the stated aim of the North Bennet Street Industrial School was to "be a good neighbor." Located in Boston's North End, the Italian neighborhood, the school's founding mission was to enable immigrants to adjust to their new country by learning the skills needed for gainful employment. This cookbook has recipes titled in English and Italian, with instructions for making zuppa Romana, fegato di manzo, lingua di manzo ai citriuoli, anitra selvatica (wild duck), coniglio arrosito alla corradino, fidelini con uova (fine spaghetti with egg), etc. Creases to front cover, incl. at corners, soiling to upper right corner of front cover; occasional pencil marks to recipes, owner's name to front free endpaper, else very good and bright.
