Chapel (1937-1990) was a French Michelin 3-star chef, credited with being one of the originators of Nouvelle Cuisine. This book is a compilation of his writings from 1980-90. Like so many French chefs, he cooked around France only to  return to his family's restaurant in Mionnay the 1960's, and by 1973 had won La Mere Charles its third star. New York Times food critic Craig Claiborne in 1977 described Chapel's gateau de foies blonds as "his ultimate triumph" and "one of the absolute cooking glories of this generation". Near fine.
