A fantastic book of fancy Victorian-era ice cream concoctions, by the owner or Marshall's School of Cookery (with ads for her school and equipment herein). The work is divided into three distinct parts: custard, cream, and water ices; souffles and mousses, and sorbets. Recipes are provided for each, as well as some imaginative and wonderful names: sultan pudding, Spencer bomb, Parisian cucumber cream, lemon ice timbal with fruits, Duchess of York timbal, Cannes rose cream egg, etc. Mild fading to spine and bumping to corners, else very good and bright.
