First published in Italy in 1980, this is the first French edition, published by famed publisher Robert Laffont. Marchesi (1930-2017) is considered to be the founder of modern Italian cuisine; the predecessor to Massimo Bottura and his ilk. After working for several famed French restaurants, including Troisgros in Roanne, Marchesi returned to Milan and eventually opened his first restaurant on Via Bonvesin de la Riva. Within a year he earned his first Michelin star, and added another following the next year. It took another seven years, but he eventually won the distinction of a third Michelin star – the first chef in Italy to do so. In September 1993, Marchesi moved out of Milan to the Franciacorta region, between Bergamo and Brescia. He opened the Ristorante di Erbusco in the Albereta Hotel where his vision of global cuisine took root and flourished. He left an invaluable legacy when he died in December last year. Irregular yellowing to covers, otherwise very good; rare.
