Illustrated with somewhat offensive drawings of Southern scenes of mammies with their young white charges, sharecroppers working in fields, servants bringing dinner to the table, etc. A chapter on using a charcoal brazier provides space for recipes like grilled spring chickens, roastin' ears (with historical context about Confederate soldiers' use of young corn on the cob), etc. Other Southern specialties include Jeff Davis pie, fried pies or "God Bless You's", Kentucky strawberry pie, curried doves with chutney sauce, artichokes a la Louisville, greens and pot likker, puree of Spinach Alabama style, etc. Flexner was famous for her Kentucky cookbooks, but this title is much less common. Chipping to jacket spine ends, with small piece lacking from spine head, 2" closed tear to upper front jacket panel, tape to jacket spine head, else very good.
