Philip Van Horn Weems (1889-1979) was a United States Navy officer stationed in Annapolis, inventor of navigational instruments and methods, including the Weems Plotter and the Second Setting Watch, and author of navigational textbooks. This book is filled with heritage recipes of Maryland contributed by restaurants and individuals give deep insight into the native foods of the state. Along with recipes for things like Crab Flake Maryland, Southern Fried Chicken, Maryland Rice Bread, Federal Cake, numerous cocktails and preserves, etc., there are entire chapters on oysters, terrapin, and game. Also, descriptions of how to deal with foods possibly unfamiliar to the reader, such as hard-shelled crabs, cooking Diamond-back terrapin, how to get started on a bear steak, etc. Very good and bright.
