Inscribed & signed by Vergé, dated 1991. Roger Vergé (1930-2015) is considered one of the greatest chefs of his time. He was known for his contemporary cooking style, often called cuisine du soleil, a variation of Provençal cuisine. Together with Paul Bocuse, Gaston Lenôtre and others, he is credited with inventing nouvelle cuisine - rejecting Escoffier's classic sauces and techniques and replacing it with fresh, local ingredients whose flavor stood out without the addition of cream and butter.
