A $40 pre-fixe menu featuring tuna & spearfish tartare with caviar, pigeon consomme with Madeira, grilled veal sweetbreads, a garden salad, and cake (!).

At the time, the chefs were Paul Bertolli and David Tanis, and cooks Peggy Smith (Cowgirl Creamery) and Amaryll Schwertner (Boulette's Larder) were also working there. Fine.
