A manual for U.S. Army cooks as they entered WWI, with numerous charts (some folding) depicting portions, costs, etc. Also illustrated are various meat cuts, mess appliances, field ranges, etc. This copy belonged to Emmett G[rady]. Bartlett, with his signature and "U.S.A. Hospital #45" to front free endpaper. Bartlett was born in 1893 in Roanoke, Virginia; he was drafted into WWI in 1917, but by 1920 was back in Roanoke managing the Roanoke Auto Painting and Upholstering Corp. Mild insect damage to covers and spine, else good.
