First published in 1972 in San Francisco, Wokcraft became an instant classic; my mother certainly had a copy. The book focuses on wok cooking, but also includes numerous recipes and advice for dim sum, steaming, tea ceremonies, soups, and pastries. Ingredients and terms are discussed at length. General rubbing to extremities, else very good.
