A scarcely written-about subject, this Himalayan cookbook contains not just recipes, but instructions for creating a balanced meal, spices and herbs, as well as how to make relishes, chutneys, and raitas, and descriptions of the foods unique to the region. Some of the recipes include Hindu sunflower seed loaf, cashew subzi, white raisins, urad, nine jewels, khoya, sweets, and lots of mung.
