Gorham Manufacturing was a leading silverware manufacturer in America at the turn of the century, and they jumped quickly on the popularity of chafing dishes. Here there are recipes for kidneys with potatoes, luncheon oyster crabs, curry of eels, snapper ragout, crabs a la Creole, and other delicacies. Very good.
