One of Heath's "Good" food series, this covers soups both classic and modern. Pineapple soup (!), strawberry soup, apricot soup, carrot soup, potage Basque, skate soup, smoked haddock soup, lobster chowder, sorrel soup, and an entire chapter of "curious soups", including nettle broth and winkle soup from the Hebrides. The final chapter is on soup garnishes. Dark stain to upper spine and area, chipping to spine head, thus just good.
