In this compendium, Maru Toledo aims to respond to the interest and affection shown by the public to find out who the "Women of Corn" are, what they do, how they support rural cooking, how they interact with gastronomy students, but above all, what are the secrets to making slow-cooked flavors.

The book is made up of the results obtained in the research that Maru Toledo carried out in Ahualulco de Mercado in 2014 and with more than 40 recipes taken from the handwritten recipe books that live in her kitchen. Dishes that are part of the daily food that she prepares in the kitchen of the Santina de la Covadonga ranch, and that she now also shares with the Women of Corn and readers interested in recovering those aromas with which many people from Jalisco grew up.
