This scarce treatise is a study of the decorations, colors, molds, pastillages, models, etc. used in classical French pastry making and cooking. It is one of the only works published specifically on this subject, and is dedicated to the Marquis de Montynard, for whom Marrec worked as a chef. Offset from old tape to front wrapper, else near fine. A rare and important work.
