Luigi Biasetto knows well that the task of the craftsman is also to share his art and every good new idea: in this book he presents 40 cakes that tell about him, his simplicity, tradition that looks to the future and to the practical management of the modern laboratory. They are perfectly balanced cakes, where taste and aesthetic research merge.
The ingredients are sacred, the main taste. The first chapter contains the cupboard cakes, some inspired by the great classics of French pastry offered in a contemporary guise. In the second chapter dedicated to cakes with creams, we find cakes for every season, in which fruit remains the undisputed protagonist. The semifreddi, sweet, soft and velvety, are collected in the third chapter.
