La ferme de la Ruchotte (Fred Ménager, Jacky Durand & Fred Ménager)

$75.00

In English & French. After a first opus published in 2013, Fred Menager returns with a new book, accompanied by Jacky Durand (writer) and Laurent Dupont (photographer).

After a stint in Alain Chapel's kitchens, Frédéric Ménager opened the Ferme de la Ruchotte with his wife Eva in 2002. Located in the heart of Burgundy, this farmhouse-inn offers vegetables grown on-site, poultry from the farm, and meats from local producers, all organic, of course, respecting the produce and the region's heritage. On the menu, this poultry enthusiast offers traditional French, even regional, cuisine of impeccable quality.

Nearly 150 recipes including the famous vol au vent à la bourgeoise and pâté croûte, but also crayfish bisque, poultry ravioli, chicken broth, burnet, black garlic, chicken liver cake, frogs in parsley, emulsified mushroom broth, porcini mushroom consommé, pumpkin gratin, herb salad, etc.
