« Ce livre est un peu la carte d’identité du Bistrot Paul Bert. Il tente d’expliquer comment d’un projet au départ strictement professionnel nous sommes arrivés, Gwen et moi, à en faire un lieu si particulier.
Notre établissement est devenu au fil des années une sorte de référence dans le milieu de la restauration. La chance nous a souri, nous étions au bon endroit au bon moment et nous avons souvent croisé les bonnes personnes.
