$60.00

Warmly inscribed & signed by the author on front free endpaper. This 2012 Costa Rican book is an ethnography that rescues the culinary wisdom of the Boruca Indigenous People (Brunca), told through their living treasures, the informants. It includes many culinary traditions of Boruca in the last century; from how they sweetened and salted their food, to the social organization for different activities such as agriculture and fishing; as well as the transition from food self-sustainability to food dependence.

The culinary knowledge described is an intangible heritage of the indigenous people of Boruca; which is shared with the purpose of publicizing its wealth in this field. It contains more than one hundred secrects made with: flowers, shoots, leaves, mushrooms, corn, seeds, tubers and meats. Without missing a variety of drinks and other drinks. It is observed in the recipes, the variety and richness of their foods, along with the simplicity of their traditional preparation; reflecting the wisdom of a people, who uses their resources in a sustainable way, respecting their environment. It also shows us the contribution of the indigenous Boruca culture to Costa Rican culture and teaches us that we still have many resources and knowledge around us that we can explore and use.
