A detailed history of winemaking science, along with in-depth exposition of the needed apparatus and equipment, proper proportions, necessary instruments for distilling alcohol, how to make sparkling wine, cider and vinegar, methods to detect diluted or adulterated wines, and an excellent and detailed catalogue of all such equipment for sale by his firm.
Salleron (1829-1897) founded the company that specialized in precision instrumentation for winemaking, and invented his first still, as well as the acetimeter still used along with his ebulliometer today. In 1880, Dujardin (1857-1947) joined the company, substantially expanded its products available for sale, and his descendants controlled the company until the 1980's. Fine.
