The author introduces the reader to the subject and offers a repertoire of 370 Mexican tamales and 141 generic recipes to make them, covering the semantics of tamales and their characterization, their wrappers, flavors, sizes and shapes, as well as their subgenres (salty and sweet, new or tender corn tamales, encueraditos, casserole and pudding, and creative unconventional styles).
