A very rare first edition of Escoffier's seminal work, Le Guide Culinaire. Auguste Escoffier was the first chef to establish military-style ranks to professional kitchens, and is perhaps best known for his innovative recipes for classic French sauces. A set of suggested menus ends out the chapters. This copy includes the folding Garde Manger chart, which has a 2" tear to lower extremity (no paper is missing).

Rubbing to extremities, particularly spine ends, sunning to upper edges, hinges starting; inelegant inscription dated 1954 to flyleaf facing title, possibly lacking half-title (as page numbers begin at iii), otherwise a very good copy of a scarce edition.
