A rare first edition of this pioneering work in American vegetarian cookery and vegan principles. The book opens with a number of chapters on the principles of vegetarianism, preservation of food, as well as the theory and philosophy of nutrition. Trall incorporates extensive sections on breads, bread-making, cakes, biscuits, whole grains, seeds, gruels and soups, which served later to inspire his student Merritt Kellogg, as well as Ellen G. White of the Seventh Day Adventists. As early as 1868, Trall began offering conferences in Battle Creek, Michigan, and he contributed to the magazine which would later become Good Health (under John H. Kellogg).
