(Jamaican) Ishmael Johnson. Enjoy Jamaican and African Cooking.
Illus. with color photographs. 10.75x8.25", pictorial boards. Revised Edition. Seattle: Ishmael Johnson, 1992.
Johnson learned to cook at age ten, and wound up working at the Errol Flynn Hotel in Port Antonio, Jamaica. In the introduction to this edition, he writes, "Thousands of blacks who have been born in the United States of America have never seemed to know much about their motherland's cooking and dining so that today, you and your entire family have this wonderful chance to learn by reading this book. How many blacks in the United States have ever heard of cooking fresh fish into coconut milk? Or using codfish to make fretters [sic]? How to boil green bananas in coconut milk?...You see, coming from the African race, you must learn our real culture." Handwritten note to front flyleaf reads, "This Book is for demonstration ONLY. Not for Sale." Gnawing to spine head, else very good.
