After studying philosophy at Princeton and working for a renewable energy equity firm in Spain, Chan apprenticed himself to NOMA and other restaurants to open a restaurant with his childhood friend, Nigerian-born Iré Hassan-Odukale.
Named after Odukale's family neighborhood in Lagos, the recently Michelin two-starred IKOYI, produces cuisine with a heavy African influence, as well as influences from Chen's Hong Kong heritage and European travels, rendering dishes that are not always what they seem and that deliver bold and surprising flavors.
